Biosensors are analytical devices that can quantitatively detect the target molecule, or monitor biological molecules or processes. They can be used in various industries and applications, such as healthcare, environmental monitoring, and food safety. The innovations regarding nanotechnology and biotechnology disciplines and their reflections on the interface and surface science broaden the horizon of the researchers about the development of more sensitive and selective and affordable and miniaturized biosensor platforms. In this chapter, a perspective for innovative biosensor developments in combination with nanotechnology and biotechnology fields are presented to the audience firstly. Then, state-of-art biosensor designs that have ground in different areas from healthcare to food safety are summarized, and the aptasensor applications of this innovative area are pointed out. The statistical data obtained from Web of Science are presented to emphasize the attractiveness and importance of this field.
